Oh, so innocent!

Or – rather, not!! haha. At times he can look innocent. He can even act innocent – at times… but in general, my little boy is learning just how much he can get away with. And he’s testing us every chance he gets!!

His vocabulary is growing every day now too! So far, we have, of course, “mama,” “dada,” and “choo-choo,” “shoe,” “sock,” “thank you,” “dog,” “juice,” “Jameson.”  hmmm are there others? Well not only is he saying more and more, but “dada” is the default word for everything! I have begun to think that it’s actually his way of pointing around at the world asking what things are called. He will point to just about anything and say “dada” but it seems to have this questioning tone to it. It is quite amazing to see his little mind just churning when you know he’s learning something. Love it!

In addition to the words, he has found music. He loves to sing “The wheels on the bus” and do all of the movements. I dont think I’ve ever caught him saying any words here, just humming and rolling his arms round and round. :) If he is tired or not in a good mood, usually I can sing “Row, row, row your boat” and get at least a smile out of him.

I am super excited with this taste of summer lately, to get him in a pool swimming. I am sure he is going to love it! Next week we are doing swimming lessons twice a week for four weeks. That should be a fun experience!!

So I wrote yesterday that Kevin made a run to the farmers market for more produce, so I had an idea. If he’s going there anyway, why not have him pick up some fresh ingredients for a soup. I found a recipe to start from and made up a list (Simply Recipes – Creamy Asparagus Soup). Well the soup I decided on was asparagus soup.

And guess what? It was AMAZING!!! I think I have a new favorite soup. Plus– it was on sale because it’s in season :)

We decided to serve the soup with a grilled chicken wrap with tomato, roasted red pepper, and lettuce. What a greAt and fresh meal. Jameson loved it too – soup and all!

I decided to substitute the heavy cream with coconut milk… it added a nice flavor!! :)

I just love the fact that we are running out of fresh produce. Kevin is out making a quick farmers market run. Might seem like a strange thing to love but this means that we’ve eaten what we bought last week. And we even ate out last night! I just hate when fruits & veggies go bad and we have to throw them away. I feel like we have been doing a good job of building meals based on the produce we have.

Last night we went out to dinner because the restaurant was right next to the store I bought my new running shoes from. They were on order and has just arrived. Very excited to try them out!

By the way I ran a 15k this past Sunday!! It was super hard and I’m glad I did it but I’m not so sure I’d do it again. I’d have to train specifically for that race next year. Do some trail training because I was totally not prepare. But I did finish!!

On the lunch menu today: leftover garden salad from last night (greens, red onion, radish, carrot, and tomato) w/cranberry white balsalmic vinegarette, spinach, herb & kale egg custard, and pineapple & banana.
