Sometimes it’s not such a bad thing when plans are ruined. Sometimes it can be a very good thing actually.
This morning, since Kevin is training for a triathlon, he decided to go for a nice long bike ride. I got up and got Jameson out to daycare and we planned to meet at a cute little cafe in Topton, the Market Cafe.
I arrived about a minute before Kevin and to our dismay, the cafe was closed. Boooooooo. They shut down for an extended holiday week (June 27th through July 5th, in case you were planning on going….). We contemplated going across the street to a diner, but knew it probably wouldn’t be as healthy. Kevin loaded his bike into our car and we thought, “hey – we don’t have to stay in Topton, let’s venture out to Kutztown.” And so we did.
I remember going online to look at the restaurants/cafes in Kutztown a few months ago, and remember reading about a coffee place, Global Libations. I knew they served organic coffee, so we decided to check it out. At the very least we thought they’d have some muffins or something as well. Well, we were in for SUCH a good surprise!

As we pulled up, a group of bicyclists were heading out, which we took as a good sign. If its a place that bike riders stop during a ride, it should be good… I must say that it was an AWESOME breakfast!
Kevin chose to have an iced coffee, which was served in a nice tall glass mug. He also had a fresh fruit parfait with granola and yogurt. It was super fresh and yummy – oh, and all organic!
I chose to have their house mug of my choice of fresh brewed coffee (only 94 cents for endless refills!). I had a hard time choosing my breakfast though, because I didnt want the heaviness of an egg sandwich with a meat, but I was in the mood for something more than fruit or oatmeal. Then I spotted it. Their breakfast sandwich with egg, cheese, and veggies. So I did something I am not known to do. I ordered the veggie sandwich without even knowing what I was ordering. Were they grilled veggies? What kind of veggies? This was a big step for me.
Oh – I was not disappointed. I got the sandwich on an organic everything bagel. My eyes lit up when it was placed on the table in front of me. Never before had I thought to put all these fresh lovely veggies on a breakfast sandwich, but this has opened a whole new world to me in the breakfast arena. On my sandwich was green pepper, a slice of tomato, cucumber, red onion, and sprouts. It was fantastic!
Everything truly happens for a reason. There was a reason Market Cafe was closed. We were meant to discover this gem of a cafe. They also offer lunch food. Soups and sandwiches. And I know Kevin and I will be going there in the near future for a lunch. So sometimes when plans get ruined, it forces you to explore new things, new places. And because of this, we have a lovely little organic cafe to return to!
Oh to be “normal” again. Lately, it feels that my existence is anything but my normal. It feels as though I go from one extreme to another. In the beginning of the year I spent numerous hours running running running. I loved it, but my goodness, I was so ready for a break!! And a break I took. Since my half marathon run on May 1, I have run only 2 times and taken 2 walks. (And those runs were at most 3 miles. Nothing like what I was running.)
Then, right around the same time that I ran the half marathon, I transitioned to a new phase – the contract work phase. I feel like ALL of my free time is spent doing contract work. Seriously, I know this is super cliche, but when it rains it POURS. Not all bad though. I have gotten some great opportunities to do work I enjoy. I just feel that I cannot seem to get the balance down. Things are happening at the same time or I am working towards a large goal, and all of my efforts go towards it.
Still in the midst of all of this, I am doing my best to be a mom. And not just a mom in name, but a hands-on, play blocks and put the little man to bed kinda mom. I hope I have been doing a good job. Although I know that it is not ideal. There most definitely have been nights when I finish my full-time day job. Grab a snack or dinner and work straight through the night. I try not to make a habit of this. My normal has been to take a break until the little man goes to bed, which is usually around 6:30 or 7pm, and then jump back on the computer for some more working time.
My hopes are that some projects will come to a close and not all will start back up again with a new project just right away. Well, I guess I ultimately have control over that, so I think I need to make some choices if it comes to it. Stagger things out a bit better.
But it isnt all bad! This extra money I am bringing in is being put to good use! We are in the process of finishing our basement (with some very generous help) and we have some big plans. Sofa, tv, bar, etc. Cannot wait for it to be finished. Somewhere else that can get cluttered with toys – hooray!
Anyway, my hope for this week is to close up some projects, get some time clocked out on the road, running (I have a 5 mile run coming up in about 2 weeks – eek!), and spend some good time with the family.

Between my long weekend runs (12 miles is slated for this saturday!), and my shorter weekday runs, I feel like all I do is live between my runs, planning when I can next go running. haha. I will sure be glad when this half marathon is here and I can run more for pleasure without feeling like I must build up to a certain level. Although I must say that it is great to have a goal, something to work towards. I would never have gotten to this level of fitness or running without signing up for a half marathon. I doubt this will be my last, but I am already excited for that feeling once I’ve finished the race. Those moments of pride and amazement, mixed with exhaustion and thirst can be quite inspiring!
Lately, this running schedule has been colliding with Kevin and my efforts to eat healthier with less preservatives, chemicals. Eating more REAL food and less of Red #2. Thus, I have been researching all natural ways to stay energized throughout a long run and then ways to replenish the electrolytes after a run. I have come up with a recipe for a homemade sports drink that is, I must say, pretty darn good!!
The sports drink tastes very similar to gatorade and has me wondering if this is where gatorade started, and as it got more and more commercially produced, did it morph into what it is today?
So you may wonder, what is in my homemade sports drink? Well I start out with a 32 oz water bottle. Then I add the following ingredients, shake to mix, and drink!!
1/4 Cup orange juice
1/4 Cup granulated sugar (I use organic evaporated kane juice)
1/4 tsp kosher salt
1 Tbsp lemon juice (I actually just cut and squeeze half of a lemon)
water – filled to the top
Make it and let me know what you think! I am thinking about trying to alter the flavors by maybe substituting half of the orange juice with some strawberry puree. We’ll see how that goes!
